Happy July 4! We are not even all American in this family of ours, but we love an excuse for a color scheme. My six year-old in particular is all decked out and ready for some fireworks.

Today we made some star blueberry popsicles and some berry parfait for a special lunchtime dessert before leaving my parents… Both were a big hit!

I bring cashew cream and fruit very often to potlucks. I am always asked the recipe, but am never able to give exact measurements, so today I measured! This recipe fed five – parfait style. It could probably be stretched a bit farther as a scoop on top of some berries.

Cashew Cream

3 ½ cups Soaked Cashews
1 1/1 cups Coconut Water
2 tablespoons Raw Honey
1-2 tablespoons of Vanilla
Dash of Nutmeg

Blend in Vitamix.
(I think you could do this in a food processor if nuts are very soft.)
